Lentils with Chorizo Recipe


      It's recipe time once again and I would like to share with you this simple dinner recipe which I do whenever I have little time for cooking. It's easy to cook because the lentils are canned and the chorizos are easy to cook. 
     But before the recipe, let me give you a few basic information about lentils. Lentils are ancient legumes which contain high-levels of protein and in itself can be a substitute for meat to the delight of people who are vegetarians. Aside from protein, it also contains other nutrients such as fiber, folate, Vitamin B1 and minerals. 
     Although in this recipe, I partnered it with chorizo de bilbao which is 'cholesterol-ish', there are other recipes using lentils you can find in the internet which you can cook and enjoy. But for now, here's the recipe with chorizo de bilbao which is ohh-so delicious.



Ingredients:

1 large can lentils                                                       2 cloves garlic, chopped
1 long chorizo de bilbao or any spanish chorizo            1 medium white onion, diced
extra-virgin olive oil                                                  lemon wedges
salt and pepper                                                         french bread (optional)

Steps:
1) Open lentil can and set aside. Slice chorizos into desired size, usually oval slants.
2) Heat olive oil and saute' garlic and onions. Add chorizos into the skillet, cook, then turn to cook the other side so that they won't crumble into bits. Next add the canned lentils with its liquid. Add salt and pepper to taste. Stir thoroughly and let simmer for 5 minutes.
3) To serve, spoon lentil with chorizo in a plate. Drizzle with extra-virgin olive oil and juice of lemon wedges. Great to eat with toasted french bread.
